We find out more as we speak to the founders of the company. Smoov is a gelato and coffee shop based in the heart to Edinburgh Old Town on Royal Mile. Established by Alex and Gabriel in 2018, the rationale was clear from the start. “We just love gelato and coffee - it’s as simple as that!” enthuses Alex. “Our dream is to bring joy to people visiting Edinburgh from all over the world and be part of their happy memories.” The main concept behind Smoov was to create unique products which are very top quality but also affordable to everyone, served in very friendly atmosphere with good vibes, and not only caters to tourists, but also locals, families and students. “We love to be a part of local community,” Alex continues. “Our attention to detail is noticeable in carefully selected decoration and finishing touches, but most importantly, in our precisely chosen products, suppliers and preparing methods.” The outstanding gelato is made using fair trade and organic ingredients, and this supports sustainable business, with main supplier of organic cream and milk being local company Mossgiel Farm. To make sure that Alex and Gabriel knew everything about making excellent gelato that people will love, they even travelled to Bergamo in Italy to be trained by professionals. Now, their own gelato is hand made every single day in what they like to call their ‘special magic machine’ and the variety of delicious flavours change every couple of days to keep visitors intrigued! “We love crafting innovative and exciting gelato, it’s so important to us! The surprising and experimental flavours rave fans, but we have also traditional flavours to please everyone. “Our organic gelato is definitely our unique selling point, but on our menu we also offer many different desserts, freshly baked waffles or sundaes, freakshakes and our number one bestseller, gelato filled doughnuts.” Regarding the coffee side of the business, the dynamic duo have chosen the reputable Artisan Roast Coffee Roasters as a coffee partner which supplies Smoov with its famous Jaszoon blend, as well as seasonal single origin beans. “We serve ‘speciality coffee’, meaning coffee beans grown in special and ideal geographic microclimates, prepared with care using various methods and techniques by farmers, freshly roasted and properly brewed,” says Alex. “Our job is to extract the best possible flavour from those beans.” Smoov’s baristas are trained by the roastery team and practice brewing techniques every day on the reliable and precise Lamarzocco Linea Classic coffee machine and Kalita Wave pour over kit, to ensure they are serving the perfect cuppa each and every time. Despite being a rather niche offering, Alex has noticed competitors springing up in and around Edinburgh, particularly over the last three to four years. “It is motivating that the competition is getting stiffer, and obviously it is good that Scottish people started to eat more and more ice cream! “From year to year we are seeing various trends coming and going and we think is a great opportunity to develop and deliver the best possible products to more and more new customers. It’s important to be flexible and always look for opportunities to grow.
